Jen's Dinner Plan Sept 1-7

Need some new ideas for dinner meals? Here is Jen’s weekly dinner menu with notes:

Sunday:  Dinner at Neighborhood BBQ

  • I brought my traditional dish of Blueberry, Quinoa, and Kale Salad

  • I filled my plate with 80% of all the healthy stuff, 20% not as healthy...which was some skillet cornbread. 

  • I have to avoid any chips. Those I can eat too much of. 

  • Dessert was small slices of 2 different homemade pies.

Monday: Sheet Pan Garlic Dijon Chicken and Brussel Sprouts

  • My daughter told me this is her favorite way I make brussel sprouts.

  • I remembered to marinade the chicken thighs ahead of time this day. 

  • I used skinless, boneless because that is what the store had in a big pack. 

  • I cooked extra chicken to have in my lunch this week.

Tuesday: Taco Stuffed Sweet Potatoes with Sauteed Squashes

  • This was the first time making this recipe by The Roasted Root.

  • It was super good! Totally a keeper. 

  • Sauteed slices of squash and zucchini in a skillet over medium heat until cooked all the way through.

Wednesday: Baked Shrimp with Tomatoes and Feta with Steamed Green Beans

  • By far my favorite shrimp dish! 

  • I added extra shrimp so I could have leftovers for lunch.

  • I skipped adding the dill.

  • Green beans were the steam in the bag kind. I then tossed in butter and seasoned with salt and pepper.


Thursday: Monday Leftovers

  • Thursday has recently become a good leftover night. 

 

Friday: Tuesday Leftovers

  • These leftovers I am excited to have again! 

  • I did make fresh sauteed zucchini.

Saturday: Dinner at il Canale in Georgetown

  • My daughter and I did a little overnighter in Georgetown, DC.

  • She choose Italian. 

  • I enjoyed homemade lobster ravioli for a treat.
