Sunday: Dinner Out - Sushi
A break from the recent reoccurring chicken on Sunday.
We went out as a family for sushi. We got 6 different rolls and shared them. I also had salad, miso soup, and hot green tea.
Monday: Zoodles and Meatballs
Easy dinner of spiralized zucchini, spaghetti sauce, and pre-made, frozen meatballs.
Tuesday: Tacos at Taco Bamba
After my daughter and I got our hair cut, we went to a great local taco place. They have street-style tacos along with some fun specialty ones. I got a butter chicken with cucumbers and cilantro taco as well as a grouper with coleslaw and ink aioli. A nice Tuesday Taco treat!
Wednesday: Mixed Greens, Roasted Radishes with Pan-Seared Salmon
This was a rare night I was having dinner by myself.
I knew I wanted pan-seared salmon. So I found what veggies I had in the fridge about to go bad - mixed greens and radishes.
Roasted radishes: halve radishes, coat with olive oil, and season with salt and pepper. Roast at 425 degrees for 20ish minutes.
The oil from radishes and salmon was enough to not need dressing on the mixed greens.
Thursday: Slow Cooker Thai Chicken Lettuce Wraps and Steamed Broccoli
Ever thought you had everything for a recipe and when you to make it, you realized you don’t have a key ingredient or ingredients? That is what happened here.
I have made these Thai Chicken Lettuce Wraps before (without the water chestnuts) on the stovetop. This time I wanted to try making them in the slow cooker.
I thought I had limes and forgot to get cilantro at the store. Bummer!
I used lemon juice in place of the limes and skipped the cilantro.
In the slow cooker, I placed 3 chicken breasts in the bottom, poured the ingredients over the chicken, and cooked on high for 4 hours.
Overall, they tasted fine but would have been much better with the lime and cilantro.
Friday: Dinner at a Friend’s
A dear friend had us over for dinner.
Chicken and beef tacos were served along with roasted cauliflower - YUM!
I made myself a taco salad and skipped the tortilla.
Saturday: Dinner at a Vision Board Party
My dear friend and podcast host of Shine Strong had a party creating vision boards. It was a good time with ladies sharing our hopes and dreams.
Leah served BBQ chicken sandwiches, coleslaw, and fruit. I had it all minus the bun.
