Need some new ideas for dinner meals? Here is Jen’s weekly dinner menu with notes:
Sunday: Tortilla-less Chicken Fajitas
After grilling chicken seasoned with homemade taco seasoning on the grill pan, I cooked slices of red onion and colorful bell peppers.
Topped the chicken and veggies with my homemade salsa and fresh cilantro. No avocado this time.
On the side, warmed canned black beans and chopped up baby spinach for my green.
Monday: Jen G’s Go To Chili Recipe
After trying multiple traditional chili recipes and not finding one I loved, I decided to create my own.
I used ground beef this time.
Tuesday: Grilled Cod with Roasted Broccoli and Radishes
I seasoned the cod with just salt and pepper. Grilled on the grill pan.
Broccoli florets and radish ...yes, radish...wedges roasted in olive oil, salt, and pepper at 425 degrees for 20-30 minutes. Tossing occasionally.
If the rashes are medium size, quartering is best when cooking with broccoli to sure they are done at the same time. If the radishes are large, slice in 6-8 wedges.
I forget how good roasted radishes are. Like a potato.
Wednesday: Sunday’s Leftovers
Mexi again! Mexican food is my favorite.
Thursday: Monday’s Leftovers
One bonus to cooking a big pot of chili is it makes great leftovers to have later in the week or to freeze for a quick meal on busy nights.
Friday: Homemade Pizza
Yes, we have this pizza often.
My daughter had a few girls over for a birthday party and they got to make their own pizzas. They loved it!

Dessert was 100 Days of Real Food 5 Minute Fudge Brownies (made with whole wheat flour) topped with vanilla ice cream.
Saturday: Curry Chickpea Salad from Sweetgreen
I L-O-V-E Sweetgreen and I L-O-V-E this salad. I like it because it is warm.
I met a dear girlfriend for a hiking date and picked up salads to have beforehand.
It was a great Girls’ Night Out!
