Jen's Dinner Plan June 2-8

Need some new ideas for dinner meals? Here is Jen’s weekly dinner menu with notes:

Sunday: One-Sheet Garlic Dijon Chicken Thighs and Brussel Sprouts

  • This time I remembered to marinate the chicken ahead of time, unlike a few weeks ago.

  • I used skin-on, bone-in chicken thighs. You can use any variation, though cooking time may need to be adjusted.

Monday: Baked Shrimp with Tomatoes and Feta and Steamed Green Beans

  • A shrimp favorite!

  • I added a little crushed red pepper.

  • Trimmed green beans in the bag you can just steam in the microwave are my go-to for easy and time-saving.

  • A dinner done in under 30 minutes.

  • Made a good lunch the next day.

Tuesday: Slow Cooker Garlic Butter Chicken and Veggies with Salad

  • We had company over this evening. I added about a half a pound more chicken tenders and extra potatoes.

  • My guests requested the recipe afterward.

  • Simple mixed green salad for a side.


Wednesday: Sunday’s Leftovers

  • Easy peasy dinner night. Thank goodness with so much going on!

Thursday: Dinner Event at Corduroy in DC

  • Picked the healthiest options available.

    • Starter: baby kale salad.

    • Entree: Seared salmon with vegetables.

    • Dessert: fresh strawberry tart.

    • To drink: club soda and lime!

Friday: Belgian Waffles and Chicken

  • Yes, you read that right. A treat dinner. It wasn’t planned for the week but seemed like a fun idea with the crazy week we had.

  • This recipe from Epicurious is my go-to waffle recipe.

  • It calls for buttermilk. If you don’t have buttermilk, you can substitute mixing ¾ cup of whole milk with 2 tablespoons of white vinegar and let sit for 5 minutes.

  • I always skip the glazed bananas, though. If you try them, I'd love to hear your thoughts.

  • For the chicken, I picked up fried chicken bites at Whole Foods.

  • Every once a while have a treat dinner!

Saturday: Mixed Greens and Grilled Chicken

  • Light, easy dinner.

  • Chicken breast grilled on the stove top grill pan.

  • Another side of mixed greens. Been a trend lately. I like easy.
