Sunday: Crab Cakes with Asparagus and Salad
We had Easter dinner at a dear friend’s house.
She served crab cakes with roasted asparagus and salad. So good!
MONDAY: SLOW COOKER GARLIC BUTTER CHICKEN AND VEGGIES
Slow cooker meals have been a must on Mondays due to my daughter’s volleyball practices.
This time I added whole Brussels sprouts on top of the chicken for a green veggie, then drizzled the butter mixture.
Always want to check that box for a green veggie with every main meal.
Tuesday: Chicken Tortilla Soup and Salad
My favorite soup!
I made this in the crock pot.
A salad of just mixed greens drizzled with olive oil and balsamic vinegar. Green veggie: Check
Wednesday: Zoodles and carrots with meat sauce
This is how I do spaghetti. Zoodles = spiralized zucchini.
For the Zoodles: Spiralize large zucchinis (need at least 1 large zucchini per person). I use the Veggetti. I had part of a bag of shredded carrots leftover, so I added them. It was a good addition.
In a skillet, warm olive oil on medium heat. Saute veggies for a few minutes until they soften some. You still want them a little crisp.
For the sauce: Brown ground meat (used beef this night) in large pot until cooked. Drain off excess fat. Add your favorite tomato sauce and cook until warm.
Thursday: Leftovers - SLOW COOKER GARLIC BUTTER CHICKEN AND VEGGIES
Good ol’ leftover night.
I actually made these earlier in the week and had them for lunch.
I spoke at a Women’s Health & Wellness Summit and was there all day. Lunch was provided, so the lunch I would have had became my dinner.
Saturday: Dinner in Georgetown - Pizza
There are a few places I will go and get pizza since I love to make it at home so much. Pizzeria Paradiso is one of those places. There are few in the DC area, so if you are ever in DC and want pizza, check this place out.
Also, this day marked 4 weeks of using my Accountability Calendar to develop my no alcohol habit. The whole month went well. I had a couple of temptations, but stuck with my club soda and water. I felt so good, and I am going to keep it up.
