Need some new ideas for dinner meals? Here is Jen’s dinner menu with notes from last week:
Sunday: Salads from Chopt
I spent my whole day assisting at a kettlebell workshop so I wanted a light and easy dinner.
After picking up my daughter at a friends house, we got some salads to go.
I am more of a Sweetgreen fan, but Chopt was on the way home.
Monday: Mexican Bean Skillet and Salad
I have made this several times. The cinnamon gives it a nice, unexpected flavor.
I decided to pan-sear the chicken a little on each side to give it a crisper taste.
I cooked a couple of extra chicken breasts and added another can of beans, so we have plenty of leftovers.
Salad was simple mixed greens, seasoned with salt and pepper, and drizzled with olive oil and lime juice
Tuesday: Stuffed Acorn Squash with Quinoa
Recipe calls for ground beef, but I made it with ground turkey and cooked the garlic with the meat.
Though I am a kale lover, my daughter isn’t so I left it out.
It took 45 minutes to cook the squash.
There was plenty of mixture to fill 3 squashes.
Though, this could stand alone as a complete meal, I decided to have quinoa made in the rice cooker on the side.
Wednesday: Shrimp Stir Fry with Forbidden Rice
A ton of veggies sauteed with shrimp tossed in my favorite teriyaki sauce - Soy Vay.
Veggies - broccoli, red peppers, carrots, squash, zucchini, mushrooms, and onion.
My favorite rice is a black rice known as Forbidden rice. It has a nutty flavor and more nutrients than white or brown rice.
Thursday: Leftovers - Stuffed Acorn Squash and Quinoa
I love to cook but do appreciate when it’s an easy night for dinner.
Friday: Leftovers - Mexican Skillet Chicken and Salad
Yep. Leftovers again. Nothing fancy.
Saturday: Irish dinner with friends
We had friends over for a pre-St. Patrick’s Day dinner.
I didn’t get any pictures of this totally yummy meal.
Based on the reviews- Increased the meat to 2lbs, cut the amount of potatoes in half, and doubled the carrots
In the end to thicken the stew, I added 1 tbsp of cornstarch mixed in about a cup of water.
This was awesome and a huge hit!
Fancy but not fancy.
So easy. It literally looks like a huge biscuit.
I had to be diligent in limiting myself to one slice.
Enjoyed my slice.
